The most common excuse for eating unhealthy is busy weekdays. It’s almost second nature to slap the alarm clock roll out of bed and pick up a greasy breakfast sandwich on your way to work. Breakfast and Lunch were the times of day I was easily tempted by sweets and fatty foods. Recently, I began precooking my breakfast and lunch so I can simply reheat in my school’s microwave and feel confident knowing I’m eating my own healthy meals on the go!
Here is a simple concoction that is my go-to breakfast or lunch throughout the week.
Tomato and Spinach Egg White Cups
What you will need. Makes 2 cups.
6oz liquid egg whites
1/2 cup of uncooked spinach
3 sliced grape tomatoes
1/4 cup of shredded mozzarella
salt and pepper to taste
2 all natural turkey sausage links (Jennie-O brand is my favorite)
Pre-Heat oven to 350 degrees.
Fill pre-greased cupcake pans half way (3oz in each).
Add sliced tomatoes, cheese and spinach.
Add salt and pepper to taste.
While the cups are cooking, add a small amount of olive oil to a pan and cook up the sausage links until golden.
Cook cups until egg whites are complete coagulated.
Enjoy with your favorite dipping sauces!!
