There is no better satisfaction than a plate of warm blueberry pancakes for breakfast. The recipe down below has hacked the same great taste of buttermilk blueberry pancakes with half the calories and double the protein. These pancakes are not only delicious but nutritious.
By using plain non-fat greek yogurt to replace the buttermilk, you’re able to add calcium, potassium, zinc, and vitamins B6 and B12. Not to mention the protein, one 5oz container of Siggis non-fat greek yogurt is loaded with 17 grams of protein and 3 grams of sugar. With these benefits comes the goodness of probiotics. These good for you bacteria will keep your gut in check.
You will need:
1/2 medium ripe banana
1/3 cup of fresh blueberries
1/2 cup of oats
1/2 teaspoon of baking powder
1/2 teaspoon of vanilla
1 5.3oz container of plain siggis nonfat yogurt
Add all ingredients except the blueberries to a blender. Blend until smooth. If the batter is too thick add a little bit of almond milk. If the batter is too thin add some oats. Coat a large skillet with cooking spray over medium heat. Once skillet is hot add 1/4 cup of the mixture then sprinkle some blueberries on top. Once the batter begins to create bubbles, flip the pancake over to cook the opposite side.
